Amicone Rosso
The drying process of the grapes in the production of this wine is so important to call this stage the “second harvest”. The healthiest and ripest grapes are picked in early October, dried on large wooden boxes at a constant temperature and humidity to avoid mould. The drying process lasts about 120 days and increases concentration of sugar. Slow maturation in oak barrels gives notes of sweet spices and chocolate.
